The instant coconut cereal was developed using a mixture design and ten formulations of were produced cake, corn flour brown rice flour. characteristics functional properties from cake on dietary fiber, physical nutritional analysis studied. Based the simplex-centroid design, had an improving effect significantly total fiber (TDF), insoluble soluble but, not in colour. best giving optimal that containing 100% result for TDF showed top three with highest fibre content 3, 15.25%; followed by 7, 11.75% 5, 10.05%. addition water absorption index compared to whole On other hand, increased solubility compare bulk density drum-dried ranged between 0.32 0.36 g/cm3. moisture study within recommended range. protein (g/100 g dry matter) lowest 8 (6.96) 3 (8.83). It also shows has array varied according proportion.
